Ingredients:
10 flour tortillas or spinach flavored wraps, small
1 block firm Aloha tofu
1/2 Japanese cucumber, sliced thinly in strips
1/2 tomato, cubed
Couple leaves of lettuce, shredded
1/2 celery stalk, finely diced
1/2 cup ranch dressing
1/8 onion, finely diced
Season to taste
Preparation:
Drain tofu and cut into 1/4 inch cubes. Place on paper towel for 15 minutes.
Place celery, cucumber, tomato, lettuce, onion, tofu, ranch dressing, and seasoning to taste in a bowl, and gently toss.
Microwave tortilla shells for 15-20 seconds until pliable. Place tortilla on a clean surface and put a 1/2 cup of filling on tortilla. Wrap.
Serve and eat immediately.
