Ingredients:
2 pounds (approx. 1 1/2 20 ounce containers) Firm Aloha Tofu, patted dry with paper towel to take out excess water, then crumbled
1 medium zucchini, chopped into small bite-size pieces
1 small Maui onion, diced small
1 small garlic clove, finely minced
1 tablespoon organic butter
1 sprig fresh parsley, minced
1 teaspoon turmeric
tamarind or herb, salt to taste
grated organic cheese (optional)
Preparation:
Melt butter in a skillet, add onion, zucchini, and parsley and saute for 5 min. Add tofu and garlic, saute 5-10 min. more, add seasonings.
May top with grated cheese just before serving.
Makes about 4 servings.
