3 ounces tofu (well drained)
2 eggs (beaten)
1 cheese slice or (2 tablespoons grated cheese)
1 tablespoon butter or margarine
¼ each teaspoon salt & pepper
Mash tofu and season with salt & pepper. Melt butter or margarine in a skillet.
Pour beaten eggs swishing it around quickly. Covering bottom of the skillet.
Add cheese and tofu. Cook over medium high heat until cheese melts. Fold in half.
Makes 1 serving
