Almond Float with Soymilk

Ingredients:

1 envelope unflavored gelatin

1/2 cup water

1-1/2 cup soymilk, unsweetened

1/2 cup sugar

2 teaspoons almond extract

Preparation:

Dissolve gelatin in 1/2 cup water.  Heat soymilk and sugar to just below boiling point.  Add gelatin to hot mixture and stir until completely mixed.  Cool and add almond extract.  Refrigerate to set.  Cut into cubes and serve with canned fruits (fruit cocktail, mandarin oranges, peaches, lychee, etc.).  Serve chilled for a refreshing treat!
