Cheese Casserole
Moriyama, Yukiko. Quick & Easy Tofu Cookbook. Tokyo: JOE, Inc., 1998.
Ingredients:
12 ounces (300g) firm tofu, well drained
8 ounces (1 cup) meat sauce
3 slices cheddar cheese (or 1 cup shredded cheddar cheese, 4 ounces = 120g)
2/3 cup soft bread crumbs
1 tablespoon butter or margarine
2 tablespoons milk
1/8 teaspoon each salt & pepper
Preparation:
Pat tofu lightly with cotton or paper towel to remove water; cut the tofu into 8 slices, ½” thick.
Lightly brush oblong baking dish with 1 tablespoon butter or margarine. Place tofu and sprinkle with 2 tablespoons milk.
Pour meat sauce over the tofu.
Place cheese slices on top of meat sauce.
Sprinkle bread crumbs over cheese slices.
Bake uncovered in 350 degree oven until cheese melts, about 20 minutes. Let stand 10 minutes.
Makes 4 servings
