Cooking with the Uyeharas
Straight from the Uyehara dinner table we present:
Tofu Soboro!
Paul’s wife Misa says that she’s been cooking tofu much more with help from the Aloha Tofu cookbook. When preparing Tofu Soboro, she says it looks so much like prepared ground chicken that it feels as though you’re really eating chicken!
Tofu Soboro is basically firm tofu that has been pressed to drain out the water, crumbled, and sauteed with soy sauce, mirin, and sugar. It’s quite the versatile dish, because it can be eaten over rice, complemented with ham and eggs as shown here, or even made into an omelette or croquette!
